Ingredients

  • 400g of spaghetti
  • 2 tablespoons of butter
  • 2 cloves of chopped garlic
  • 300g of shrimp (peeled and deveined)
  • 1 cup of heavy whipping cream or dairy cream
  • ½ cup grated Parmesan cheese
  • ½ cup chicken broth (or water)
  • 1 tablespoon of chopped fresh parsley (optional)
  • Salt and black pepper to taste
  • A pinch of chili powder (optional)

Instructions

  • Cook the spaghetti in salted water until al dente. Reserve some of the cooking water before draining.
  • Melt the butter in a frying pan and sauté the shrimp for 2-3 minutes on each side. Remove and set aside.
  • Sauté the garlic in the same pan for 1 minute without letting it burn.
  • Add the chicken broth and cream and let it simmer gently for a few minutes.
  • Stir in the Parmesan cheese and mix until the sauce thickens. Season with salt, pepper, and chili powder if desired.
  • Add the shrimp and pasta to the sauce, mixing well. If necessary, adjust the consistency with the reserved cooking water.
  • Serve hot with fresh parsley and more Parmesan cheese.

Notes

  • For a more intense flavor, add a splash of white wine to the garlic sofrito.
  • If you prefer a lighter version, you can use evaporated milk instead of cream.
  • Serve with garlic bread or a fresh salad for a balanced meal.
