Ingredients
- 4Â boneless, skinless chicken breasts
- 200 g fresh or frozen spinach
- 2Â cloves of chopped garlic
- 1Â tablespoon of olive oil
- 150g of cream cheese
- 1/2Â cup of grated cheese
- 1/4Â teaspoon of nutmeg (optional)
- Salt and pepper to taste
- 1Â egg (optional)
- 1/2Â cup breadcrumbs (optional)
- Oil or butter for browning
Instructions
- Sauté the garlic in oil and add the spinach until it reduces.
- Mix with the cheeses, salt, pepper, and nutmeg.
- Make a cut in each breast to form a pocket.
- Fill with the spinach and cheese mixture and close with toothpicks.
- (Optional) Dip them in beaten egg and breadcrumbs to coat them.
- Brown the chicken breasts in a pan for 6-7 minutes on each side or finish in the oven.
- Serve hot with salad, rice or mashed potatoes.
Notes
- You can use ricotta, mozzarella or vegan cheese.
- Add a few drops of lemon juice to the filling for a tangy touch.
- Use toothpicks to prevent the filling from spilling out.
