This Taco Bell Mexican Pizza is a crispy, cheesy, and flavor-packed copycat favorite made right at home. Layers of crunchy tortillas, seasoned beef, refried beans, melty cheese, and zesty sauce come together for a fun, nostalgic dinner that’s easy, comforting, and totally irresistible.

Ingredients

  • Meat & seasoning
  • 1/2 lb 225 g ground beef
  • 1 tbsp taco seasoning
  • 2 tbsp water
  • Base & layers
  • 8 small flour tortillas soft taco size
  • 1 cup refried beans
  • Sauce
  • 3/4 cup mild enchilada sauce or canned Mexican-style tomato sauce
  • Cheese & toppings
  • 1 1/2 cups shredded Mexican-blend cheese
  • 1/2 cup diced tomatoes
  • 2 green onions thinly sliced
  • Optional: sliced black olives sour cream, jalapeños

Instructions

  • Cook the beef
  • In a skillet over medium heat, cook the ground beef until browned.
  • Drain excess fat, then stir in taco seasoning and water. Simmer 2 minutes. Remove from heat.
  • Crisp the tortillas
  • Heat a dry skillet over medium.
  • Lightly toast each tortilla on both sides until golden and lightly crisp. Set aside.
  • Assemble the base
  • Spread about 2 tablespoons of refried beans on one tortilla.
  • Add a thin layer of seasoned beef.
  • Create the stack
  • Place a second tortilla on top to form a sandwich.
  • Spoon about 2–3 tablespoons enchilada sauce over the top tortilla.
  • Add cheese & toppings
  • Sprinkle generously with shredded cheese.
  • Add diced tomatoes and any optional toppings you like.
  • Bake
  • Place assembled pizzas on a baking sheet and bake at 400°F (200°C) for 8–10 minutes,
  • just until the cheese is fully melted and bubbly.
  • Finish & serve
  • Garnish with green onions and serve immediately.
