Ingredients

  • 4 medium russet potatoes about 600–700g
  • 3 tbsp olive oil or melted butter
  • 2 cloves garlic minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp fresh rosemary or thyme chopped (optional)
  • 2 tbsp grated Parmesan cheese optional, for extra crisp

Instructions

  • Preheat Oven
  • Heat oven to 425°F (220°C).
  • Line a baking sheet with parchment paper or lightly grease it.
  • Prepare Potatoes
  • Wash and scrub potatoes. Pat dry.
  • Place each potato between two chopsticks or wooden spoons.
  • Slice thinly (1/8–1/4 inch) along the potato, stopping before cutting all the way through — the chopsticks prevent slicing fully.
  • Season Potatoes
  • Brush olive oil or melted butter over each potato, making sure it seeps between the slices.
  • Sprinkle salt, pepper, and herbs evenly.
  • Add minced garlic tucked into some of the slices for extra flavor.
  • Bake
  • Place potatoes on the prepared baking sheet.
  • Bake for 35 minutes, then brush again with more oil or butter.
  • Continue baking for 15–25 minutes until edges are crispy and the inside is tender.
  • Optional Finish
