Ingredients

For the Meatballs:

  • 1 lb 450g ground beef (or half beef, half pork)
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp dried oregano

For the Rice & Sauce:

  • 2 cups cooked white rice or brown rice
  • 1 tbsp olive oil
  • 2 cups broccoli florets optional, steamed
  • ½ cup onion diced
  • 3 cloves garlic minced

Honey Garlic Sauce:

  • ⅓ cup honey
  • ⅓ cup soy sauce
  • 2 tbsp ketchup
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tsp sesame oil
  • 1 tsp cornstarch mixed with 2 tsp water

Instructions

  • Preheat Oven
  • Preheat your oven to 375°F (190°C).
  • Lightly grease a 9×13-inch baking dish.
  • Make the Meatballs
  • In a bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic, salt, pepper, oregano.
  • Roll mixture into 1–1.5 inch meatballs.
  • Place meatballs on a parchment-lined baking sheet and bake 12–15 minutes until lightly browned (they’ll finish cooking in the casserole).
  • Prepare Rice & Veggies
  • Cook rice according to package instructions.
  • Steam broccoli if using.
  • In a skillet, heat olive oil and sauté onion and garlic until soft.
  • Make Honey Garlic Sauce
  • In a small saucepan, whisk together honey, soy sauce, ketchup, vinegar, sesame oil.
  • Bring to a simmer over medium heat.
  • Stir in cornstarch slurry and cook until thickened (1–2 minutes). Remove from heat.
  • Assemble the Casserole
  • Spread cooked rice in the greased baking dish.
  • Add sautéed onions, garlic, and broccoli.
  • Nestle baked meatballs on top.
  • Pour honey garlic sauce evenly over the meatballs and rice.
  • Bake
  • Cover with foil and bake 15 minutes.
  • Remove foil and bake 5–10 minutes more to allow sauce to bubble and caramelize slightly.
  • Serve
  • Let rest 5 minutes before serving.
  • Garnish with sesame seeds or chopped green onions if desired.
