  •  lb 700 g baby potatoes, halved
  • 2 bell peppers red and yellow, sliced
  • 1 medium red onion sliced
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • Salt and black pepper to taste
  • Optional: fresh parsley or basil chopped (for garnish)

Instructions

  • Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it.
