Ingredients

  • 800g of plain wheat flour
  • 200g of whole wheat flour
  • 200 ml of lukewarm milk
  • 150 ml of warm water
  • 10 g active dry yeast (or 30 g fresh yeast)
  • 3 eggs
  • 100 g of sugar
  • 100g of soft butter
  • 1 teaspoon of salt
  • 1 tablespoon of vanilla extract or orange zest (optional)

Instructions

  1. Dissolve the yeast in warm milk with a tablespoon of sugar. Let it rest for 10 minutes until it foams.
  2. In a bowl, mix flours, sugar, and salt. Add the eggs, activated yeast, warm water, and flavoring.
  3. Knead for 5 minutes. Gradually incorporate the butter until you obtain a smooth and elastic dough.
  4. Let it rest for 1 hour in a warm place, covered with a cloth, until it doubles in volume.
  5. Divide into portions and form braided or ring-shaped doughnuts.
  6. Place on greased trays and let rest for another 30 minutes.
  7. Preheat the oven to 180°C. Brush with beaten egg if desired.
  8. Bake for 25 minutes or until golden brown. Cool on a wire rack.

Notes

  • The butter should be soft, not melted.
  • If the dough is too sticky, add a little more flour, but sparingly.
  • Plant-based milk can be used for a dairy-free version.
