Ingredients

  • 12 oz 340 g spaghetti or linguine
  • 1 lb 450 g raw shrimp, peeled and deveined
  • 4 tablespoons olive oil divided
  • 6 cloves garlic finely minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon red pepper flakes optional
  • ½ cup chicken broth
  • ½ cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons fresh parsley chopped
  • Juice of ½ lemon

Instructions

  • Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve ½ cup of pasta water, then drain.
  • In a bowl, season shrimp with salt, pepper, paprika, and red pepper flakes.
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add shrimp and cook 1–2 minutes per side until pink and just cooked through. Remove shrimp and set aside.
  • In the same pan, add remaining olive oil and butter. Stir in minced garlic and sauté for about 30 seconds until fragrant.
  • Pour in chicken broth and let it simmer for 2 minutes to reduce slightly.
  • Stir in heavy cream and Parmesan cheese. Simmer gently until the sauce thickens, about 3–4 minutes.
  • Add cooked pasta and reserved pasta water as needed to loosen the sauce. Toss until well coated.
  • Return shrimp to the skillet and toss gently to combine.
  • Finish with lemon juice and fresh parsley. Taste and adjust seasoning if needed.
  • Serve hot with extra Parmesan on top.
