Ingredients

  • For the Crust & Topping
  • 2 ½ cups 315g all-purpose flour
  • 1 cup 226g unsalted butter, cold and cubed
  • ½ cup 100g granulated sugar
  • ¼ teaspoon salt
  • 6 –8 tablespoons ice water
  • For the Apple Filling
  • 5 cups about 5–6 medium apples, peeled and thinly sliced
  • ¾ cup 150g brown sugar
  • 2 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • Optional Glaze
  • 1 cup 120g powdered sugar
  • 1 –2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  • 1️⃣ Prepare the Crust
  • Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  • In a large bowl, whisk together flour, sugar, and salt.
  • Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
  • Gradually add ice water, 1 tablespoon at a time, mixing until dough comes together.
  • Divide dough in half. Press one half evenly into the bottom of the prepared pan.
  • Chill remaining dough in refrigerator while preparing filling.
  • 2️⃣ Make the Apple Filling
  • In a large bowl, combine sliced apples, brown sugar, granulated sugar, cornstarch, cinnamon, nutmeg, lemon juice, and vanilla.
  • Toss until apples are evenly coated.
  • 3️⃣ Assemble
  • Spread apple mixture evenly over the crust.
  • Roll out remaining dough on a lightly floured surface and place over apples (or crumble for a rustic topping).
  • Lightly press edges to seal.
  • 4️⃣ Bake
  • Bake for 45–50 minutes, or until top is golden brown and filling is bubbling.
