- 2 lbs carrots peeled and sliced into thick rounds
- ¼ cup honey
- 3 tablespoons unsalted butter cut into small pieces
- ¼ cup brown sugar light or dark
- ½ teaspoon salt
- ¼ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg optional
- 1 tablespoon water or orange juice
- 1 teaspoon cornstarch optional, for thicker glaze
- 1 tablespoon fresh parsley chopped (optional, for garnish)

Place the sliced carrots evenly in the bottom of the slow cooker.

In a small bowl, mix together the honey, brown sugar, salt, cinnamon, nutmeg, and water (or orange juice).
